kalua pork – pork shoulder braised until tender with liquid smoke and hawaiian salt
waialua kona coffee – waialua chocolate infused with kona coffee
mole sauce – spanish/mexican hot sauce consisting of chiles, garlic, tomatoes, onions, celery, carrots, cumin, oregano, chocolate
ancho chili sauce – hot sauce made from ancho chilis, garlic, tomatoes, onions, celery, carrots, cumin chili powder
queso fondido – spanish for melted cheese
hamakua tomatoes – specialty vine ripened tomatoes from the big island, richard ha’s farm in hamakua
chipotle sauce – a sauce made from smoked jalapenos, carrots, onions, tomatoes, chilis, cumin spice, garlic, ancho chilis, oregano

haleiwa papaya and cumin marinade –, papaya, garlic, cumin, salad oil, lime juice, onions, chili powder. the enzyme in the papaya is a natural meat tenderizer
